15-Minute Shakshuka for One

Shakshuka is the ultimate solo breakfast — eggs poached in a spiced tomato sauce, ready in 15 minutes with ingredients you probably already have. No recipe scales down better than this one.

Ingredients

  • 2 eggs
  • 1 can (200g) diced tomatoes
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Pinch of cayenne pepper
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro and crusty bread for serving

Instructions

  1. Heat olive oil in a small skillet over medium heat. Saute onion 3 minutes until soft.
  2. Add garlic, cumin, paprika, and cayenne. Cook 30 seconds.
  3. Pour in tomatoes, season with salt and pepper. Simmer 5 minutes until slightly thickened.
  4. Make two wells in the sauce, crack eggs into them. Cover and cook 4-5 minutes until whites are set but yolks are still runny.
  5. Top with cilantro, serve with crusty bread for dipping.

Tips

  • Add feta: Crumble feta over the top before covering — it gets warm and creamy.
  • Spice level: Skip the cayenne if you prefer mild, double it if you like heat.
  • Not just breakfast: This makes an excellent quick dinner too.
