Shakshuka is the ultimate solo breakfast — eggs poached in a spiced tomato sauce, ready in 15 minutes with ingredients you probably already have. No recipe scales down better than this one.
Ingredients
- 2 eggs
- 1 can (200g) diced tomatoes
- 1/2 onion, diced
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Pinch of cayenne pepper
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro and crusty bread for serving
Instructions
- Heat olive oil in a small skillet over medium heat. Saute onion 3 minutes until soft.
- Add garlic, cumin, paprika, and cayenne. Cook 30 seconds.
- Pour in tomatoes, season with salt and pepper. Simmer 5 minutes until slightly thickened.
- Make two wells in the sauce, crack eggs into them. Cover and cook 4-5 minutes until whites are set but yolks are still runny.
- Top with cilantro, serve with crusty bread for dipping.
Tips
- Add feta: Crumble feta over the top before covering — it gets warm and creamy.
- Spice level: Skip the cayenne if you prefer mild, double it if you like heat.
- Not just breakfast: This makes an excellent quick dinner too.
